Removing unwanted odors and flavors is achieved by heating the fat to high temperatures under vacuum, which prevents oxidation and preserves the quality of the product.

Winterization
A gradual decrease in the temperature of the fat allows the separation of the stearic precipitate, consisting mainly of Omega-6 and Omega-9 polyunsaturated acids, followed by filtration to obtain transparent fat at zero temperatures.
